This is the fifth release of Priest Ranch Cabernet Sauvignon from our Somerston Estate. It shows aromas of dark chocolate, blackberry, spice, and dark cherry. On the palate, the wine is smooth yet full bodied and refined, with ripe dark berries, juicy chocolate, and a touch of spice. This silky rich wine has a long finish
that keeps on giving!
This sparkling wines was made in the tradition méthode champenoise. The grapes were whole cluster pressed and the juice was settled for two days. Fermentation was completed in both stainless steel drums and neutral French oak barrels. The malolactic fermentation was prevented by adding SO2. The wine was barrel aged for 12 months then aged on tirage for 18 months before riddling, disgorging, and adding the dosage.
The grapes were sorted, de-stemmed, and pumped to tank for an eight day cold soak at 50 degrees. The indigenous yeast fermentation lasted 14 days with a max temp of 82 degrees. Aerated pumpovers were done twice per day. When fermentation was complete, the tank was drained overnight to capture the concentrated free run wine. Malolactic fermentation occurred naturally in the barrel. The wine was aged in 50% new French oak Barrels and 50% once used French oak barrels and is a blend of 68% Cabernet Sauvignon, 22% Merlot, 10% Petite Verdot.
This wine has bright aromas of melons and honeysuckle. The palate is crisp with good acidity, a touch of tannins, and bright stone fruits. This wine unique wine from the Eastern hills of the napa valley showcases the diversity of our property.
This wine has ripe tropical aromas that burst out of the glass. The palette is crisp and full of ripe flavors that are balanced by the wines bright acidity. There is a touch of richness on the pallet from the lees stirring in the barrel.
This is our fourth release of Priest Ranch Zinfandel from our Somerston Estate. Our 2011 vintage is a balanced wine and a more classic representation of a hillside Zinfandel. Aromas display notes of coffee, red cherry, and rose petals. On the palate, the wine has flavors of black cherry, spice, and vanilla. This medium bodied wine is focused on balance, finishing with nicely polished tannins.
This is the fifth release of Priest Ranch Petite Sirah from the Somerston Estate. The 2010 vintage Petite Sirah is an inky wine with dark fruit aromas of bark berries and spice. The palate offers supple dark cherry flavors, cinnamon, and white pepper with a wonderful balance of firm yet integrated tannins.
